a little bit about me and my blog:
my name is connie, and about 3 years ago i was diagnosed with celiac. i have always loved to cook, and bake, so being diagnosed with celiac changed my whole world. i went from being able to eat anything i wanted and loved to cutting much of my favorite dishes and desserts out of my diet. i am fortunate enough that i was diagnosed so late in my life. i have had a life time of eating great foods, and amazing entrees, but most of all, i've spent a life time being allowed to eat what i love most: dessert.
the beginning of this new gluten-free chapter of my life was rough! i couldn't find anything without gluten that was bareable enough to actually eat. the gluten-free (GF) products i bought at the grocery store were bland, tasteless, and just plain aweful! i began tweaking my recipes so they were 'safe' for me to eat, but still i wasnt satisfied. in the last 3 years, i've created some amazing dishes, and desserts that are GF. they weren't instant successes, but over time, i found ways to make them better. ways to make a GF cheesecake crust, and GF cheesecake. a GF chocolate brownie trifle to die for! and much more that makes my mouth water while i type this.
so, this blog is a way for me to share my recipes and GF findings with you, and i hope you will share whatever you've found with me!
I am a first-time blogger, and i would appreciate any tips you long-time bloggers may want to offer. :)
